I Am Not Paula Deen, Jr.

A friend recently said that, after reading this blog, she wondered if I spent a lot of time watching Queen Deen. It may be hard to believe, but not all of my cooking is ladened with FAT!

Okay, I LOVE Paula, and I do own one of her cookbooks and a set of DVDs, but she is not the only Food Network star I admire or from whom I take my cooking cues!

Actually, not that it's important, but back in 1991, I moved to Nashville, Tennessee to live out a dream of working in the music industry.  I wasn't extremely focused back then. I was young and immature. I had no real responsibilities and knew only that I had a talent and a degree and a lofty goal of becoming a published songwriter.

I don't know if you remember this, but in 1991, we had a "mini-recession."  Nothing, of course like we're experiencing now, but it made a difference in the job market. The ink hadn't even dried on my diploma when I packed my car and headed South to find a disappointing job market and Music Row doors...mostly... locked shut.

So, I ended up doing a lot of waitressing as I waited to finally break in. I found that, if the chef or one of his sidekicks thought you were cute, they let you hang out in the kitchen and if you showed any kind of interest in cooking...they put you to work! Plus, it ensured that your guests got their food on time and YOU got a nice tip!

I worked in three very high-end restaurants throughout my Nashville experience. Two of which were owned by the same, entrepreneurial, lovable wacko who taught me to love the restaurant business. The other restaurant is where sexy Chef "Weekly-Colonic-Cucumber-Tonic" taught me how to prepare tofu and make healthy substitutions that excluded butter, cream, cheese and meat. Newsflash!! I actually know how to cook (and eat) healthy...it's just not something I do on a regular basis. I think I was my lowest, healthiest at this point, too!

In closing, although I do have an affinity for cheese and a love for good wine, I don't think of myself as anything like anyone else out there, so I wouldn't know to whom to compare myself. I live in my own little bubble, whether it's reality or not! However, I'll refrain from posting the Underwood Deviled Ham recipe and tomorrow, I'll post a semi-healthy recipe for Y'ALL!
