I will be the first to admit, I prefer creating great food to invoicing clients. I could spend hours in the kitchen just making up recipes or modifying existing ones...and less time figuring prices and negotiating events.
Even though I've been in sales practically all my life, I'm finding that anything beyond proposing specific food for a specific client's event, cooking, serving and delighting their guests with that food is, well, becoming a tedious task.
Now, don't get me wrong. I do enjoy business. I enjoy making money, but not as much as I enjoy seeing people light up when I explain infusing lavender in my organic chocolate creme-filled cannoli and how that pairs with a wine that my sommelier friend has chosen for me...it's art. Invoicing, spreadsheets, taxes, paperwork...GEESH!
My hope is that I make enough money that by next year, I will have HIRED someone to take care of this for me so I can continue dishing out what I'm cookin' up!!!
