If you are fortunate enough to have a great cheese selection in your local grocery store, you will find a Spanish cheese called "Manchego." This is a sheep's milk cheese that is semi-hard; meaning you can grate it or shave it when cold or slice it up after its allowed to reach room temperature. What you'll find when you taste this cheese is a definite undertone of chocolate.

Just one piece of your favorite brand of dark or milk chocolate (we LOVE Dove!) paired with a small chunk of Manchego and served with a sip of Merlot will have you thinking differently about creating savory and sweet combinations!
For catering and private pairing parties, A Brown Bag Gourmet pairs our organic chocolate-balsamic fudge with Manchego that has been allowed to warm up for one hour.
